1 small red onion

1 small white onion

1 medium red bell pepper

9 natural mushrooms

1 medium zucchini

4 ripe tomatoes

Extra olive oil.

Arugula (to taste, I put about 120 grams)

Seed mix (I buy the ones from Mercadona)

1 Greek yogurt (natural without sugar is also good for you)

Lasagna sheets or plates

Grated mozzarella cheese.


Peel the onions, wash the peppers, tomatoes, mushrooms and zucchini and chop it small.In a frying pan we put a little extra virgin oil and all vegetables except the tomatoes.

Add the chopped tomatoes and arugula, stir over low heat
We incorporate a variety of seeds, the amount to taste.
We put the Greek yogurt and stir, as you can see in the photo, the water in the vegetables has already been reduced
We make the lasagna sheets according to the manufacturer's instructions and we place them
On top of the vegetables we have prepared
We repeat a base of sheets and on these the vegetables until we have three bases of sheets
We finish with the vegetables and grated mozzarella cheese on top. We put it in the oven preheated to 160 degrees for 10 to 15 minutes.


On a plate we place a square piece keeping the three layers
